Condiment obtained from white grape must acetified and left to rest in oak barrels so that it takes a golden color. Its most obvious characteristic feature is not altering the color of the dishes and offers delicately acidic fruity aroma and flavour. Pomegranata aroma is added, then transformed in pearls based on alginate, a substance produced by algea.
