    The variety :

    Olive of French origin, with dual capability: use for the manufacture of olive oil and confectionery table olives. It is a rustic variety self-compatible, its fruits give excellent quality oil that keeps well.

    Oil:

    Aglandau Olive oil is very fluid in the mouth and let out a very fruity marked by aromas of raw artichoke or freshly cut grass. It is also characterized by a medium to intense pungency.

  • Grossane Olive oil

    Variety:

    This variety is of French origin and produced exclusively in the Bouches du Rhône. Its fruits are used mainly for the production of black olives and are appreciated for their particularly sweet flavor. For the production of oil, Grossane gives a low yield with a finely flavored juice.

    Oil:

    Grossane oil is without bitterness or pungency with very buttery aromas and sweet almond. Soft and harmonious fruity.

  • Picholine Olive Oil

    Variety:

    This variety of French origin is well established in the Gard, the Bouches-du-Rhône and Var. Hardy variety capable of adapting to different environments but quite demanding as to certain farming practices. Picholine is mainly used for the preparation of green pickled olives table. Its oil is of excellent quality and extraction difficult.

    Oil:

    Oil Picholine is very intense and very fervent in the groove. It provides first hints of dried fruit and pepper very strong aftertaste.

  • Salonenque olive oil

    Variety :

    Variety of French origin who synonyms for "Plant Fair," its distribution is concentrated in the Bouches-du-Rhône where it occupies 66% of the olive area.     Oil:

    Verdale oil of Rhone delta has a very light fruitiness leaving out herbaceous flavors (freshly cut grass) and green apple.

  • Olive Oil Blend

    Variety :

    Grossane, Verdale, Aglandau, Salonenque and Picholine are all local varieties of Alpilles. The most numerous in our village are Salonenque, Aglandau and Grossane. Picholine is about 5% of the plantations in our area while Verdale of Bouches-du-Rhône was marginally stronger replanted after 1956 gel.
